Crockpot version on bottom!


¾ cup diced onion
1 garlic clove, minced
1 pound ground turkey
2 cups cooked long grain rice
¼ teaspoon ground cumin
¼ teaspoon crushed red pepper
salt and pepper
1 (28 oz) can crushed tomatoes with juice

Preheat oven to 350°.
Heat a skillet over medium heat and coat with cooking spray. Sauté onion and garlic until tender.
In a medium bowl, combine onion and garlic, turkey, rice, and spices, mixing well. Shape into 30-32 balls about the size of golf balls.
Place meatballs in a baking dish and pour tomatoes over them.
Bake at 350° for one hour.
Makes ~ 32 meatballs.
Four meatballs = 3 points
