I'm not sure why but of all the recipes I've ever made for Peanut Butter Cookies, this one is the best!
½ cup butter or margarine
½ cup sugar
½ cup brown sugar
½ cup peanut butter
1 teaspoon baking soda
½ teaspoon salt
1 ¼ cups flour
Preheat oven to 350°.
Beat butter with electric mixer until soft. Gradually beat in the sugar and then the brown sugar.
When mixture is creamy, beat in the egg and then the peanut butter.
With a fork, stir the baking soda into the flour. And then add the dry ingredients to the butter mixture and mix just until the flour is blended.
Roll teaspoons of dough into balls and place on a cookie sheet. With a fork dipped in cold water, gently flatten each cookie to ¼ inch thickness.
Bake for 12-15 minutes.
