No Pudge Clone Mix


I got this from an email group I belong to. It's good. I made the Chocolate Bran Muffins with it. I've never actually tried the real No Pudge Mix, and now I probably never will. Anyway, No Pudge is a brownie mix but can be used for many different purposes!


1 cup sugar
1 cup all-purpose flour
cup cocoa powder
1 tablespoon dehydrated egg whites or 2 liquid egg whites
2 teaspoons cornstarch
teaspoon baking soda
teaspoon salt

Mix with 2/3 cup nonfat vanilla yogurt or 2/3 cup unsweetened applesauce and 1 teaspoon vanilla extract.
Spread into an 8x8 pan, sprayed with cooking spray, and bake at 350 for 32 - 34 minutes.


Single serving: In a custard cup or small microwave-safe container, combine 2 tablespoons of the mix and 1 tablespoon fat free vanilla yogurt. Microwave on high for one minute. (2 points)

Minis: Bake at 350 for 20 minutes in mini-muffin cups. (Makes 12 at 2 points each)

Cookies: Drop batter by the tablespoon onto sprayed baking sheet. Bake for 9 minutes at 400 degrees. (Points depend on how many cookies you get. The entire batter with the yogurt equals 30 points. Just divide that by the number of cookies you make)

Cream Cheese brownies: Mix brownies as directed and add to pan. Combine 1/3 cup yogurt, 3 ounces light cream cheese, and 1/4 teaspoon vanilla in a small bowl. Marble into brownie mixture and bake for 35-40 minutes at 350. (Makes 15 brownies at 2.5 points each).

Serves 15 at 2 points each.
