No Pudge Clone Mix


I got this from an email group I belong to. It's good. I made the Chocolate Bran Muffins with it. I've never actually tried the real No Pudge Mix, and now I probably never will. Anyway, No Pudge is a brownie mix but can be used for many different purposes!


1 cup sugar
1 cup all-purpose flour
½ cup cocoa powder
1 tablespoon dehydrated egg whites or 2 liquid egg whites
2 teaspoons cornstarch
¼ teaspoon baking soda
¼ teaspoon salt

Mix with 2/3 cup nonfat vanilla yogurt or 2/3 cup unsweetened applesauce and 1 teaspoon vanilla extract.
Spread into an 8x8 pan, sprayed with cooking spray, and bake at 350° for 32 - 34 minutes.


Single serving: In a custard cup or small microwave-safe container, combine 2 tablespoons of the mix and 1 tablespoon fat free vanilla yogurt. Microwave on high for one minute. (2 points)

Minis: Bake at 350° for 20 minutes in mini-muffin cups. (Makes 12 at 2 points each)

Cookies: Drop batter by the tablespoon onto sprayed baking sheet. Bake for 9 minutes at 400° degrees. (Points depend on how many cookies you get. The entire batter with the yogurt equals 30 points. Just divide that by the number of cookies you make)

Cream Cheese brownies: Mix brownies as directed and add to pan. Combine 1/3 cup yogurt, 3 ounces light cream cheese, and 1/4 teaspoon vanilla in a small bowl. Marble into brownie mixture and bake for 35-40 minutes at 350°. (Makes 15 brownies at 2.5 points each).

Serves 15 at 2 points each.
