French Country Stew


This stew is good plain, or served over rice or bulgur wheat, etc...


1 pound fully cooked kielbasa, halved and cut into ¼-inch slices
1 can (16 oz) kidney beans, rinsed and drained
1 can (16 oz) great northern beans, rinsed and drained
1 can (16 oz) black beans, rinsed and drained
1 can (15 oz) diced tomatoes, undrained
3 medium carrots, thinly sliced
2 small onions, minced
½ cup beef broth
2 garlic cloves, minced
1 ½ teas thyme

Combine all ingredients in a bowl; transfer to an ungreased 3-qt. baking dish.
Cover and bake at 375° for 45 - 50 minutes or until the carrots are tender.
Yield: 9 servings.
