Farfalle With Zucchini


This pasta is simple and delicious! Try adding cooked chicken or canned tuna if you want a heartier meal. Just sauté the meat with the garlic and tomatoes.


1/2 pound farfalle (bow tie) pasta
2 medium zucchini
2 garlic cloves, crushed
1 pint grape tomatoes, halved
Extra-virgin olive oil, salt, and pepper to taste

Cook the pasta until al dente. Thinly slice the zucchini, and place in a large bowl.
Drain the pasta over the bowl; let stand 2 minutes, and drain.
Melt 1 tablespoon butter in a large skillet, and sauté garlic and tomatoes 3 minutes.
Remove from heat. Toss with pasta, olive oil, and zucchini; season with salt and fresh ground black pepper.
Makes 4 servings.
