Olive oil spray
1 small onion, diced
2 cloves garlic, minced
1 teaspoon rosemary
1 teaspoon thyme
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound lean ground turkey
1 can 98% fat free mushroom soup, divided
1 egg, slightly beaten
6 servings instant mashed potatoes, prepared with milk
1/2 cup (2 ounces) cheddar cheese, shredded
Preheat oven to 350°.
Heat olive oil spray in skillet and add onion and garlic. Sauté until tender. Add spices and toss just until fragrant (about 5 seconds). Add turkey and cook through.
Add 1/2 cup of the soup and egg to meat mixture and mix through. Spread mixture into a 9 inch pie plate. Bake for 25 minutes.
Prepare potatoes according to package directions. Spoon on top of meat pie. Top potatoes with remaining soup and sprinkle with cheese. Bake an additional 10 minutes.
