I'm not sure about this resipe. I have to make it one more time. I didn't grease the baking dish (the original directions said not to) and it all stuck to the bottom. It was okay, but not superb. It needs something... I didn't have any green onion so I didn't add it, maybe that's all it needs!
2 cups cottage cheese
¾ cup soft whole wheat bread crumbs (about 1 slice)
½ cup whole wheat flour
1/3 cup snipped parsley
1/3 cup finely chopped onion
2 tablespoons margarine
¼ teaspoon salt
Preheat oven to 350°.
In a medium mixing bowl combine cottage cheese, bread crumbs, flour, 1/3 cup parsley, green onion, margarine and salt. Set aside.
In a large mixing bowl beat eggs with an electric mixer on high speed about minutes or till thick and lemon colored. Gradually pour the cottage cheese mixture over the beaten eggs, folding to combine.
Pour the egg mixture into a greased 5 or 6 cup soufflé dish or casserole. Bake at 350° for about an hour until a knife inserted near the center comes out clean. Sprinkle with 1 tablespoon parsley. Serve immediately.
