This is really good! It's like pigs in a blanket but with no blankets! So it's even easier than pigs in a blanket! Because there's no blanket...
You can use rice or barley - see points info below!
10 ounces ground turkey
1 green pepper, chopped
1 medium onion, chopped
2 garlic cloves, minced
1 can (10 oz) diced tomatoes and green chilies
1 can (8 oz) tomato sauce
1/2 cup uncooked long grain rice*, or pearl barley**
1 teas salt
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
4 to 6 drops hot pepper sauce
1 small head cabbage, chopped
1 cup (4 oz) shredded low fat Colby cheese
Preheat oven to 350°.
In a skillet, cook the turkey, green pepper, onion, and garlic until meat is no longer pink; drain. Stir in the tomatoes, sauce, rice, and seasonings.
Spread in an ungreased baking dish. Top with the cabbage and cheese. Cover and bake for 65-75 minutes or until the rice in tender.
*Makes 6 servings at 4 points each if using rice.
**Makes 6 servings at 3 points each if using barley.
