These muffins are good. You can also toss in some blueberries instead of one of the bananas.
They freeze well!
2 medium ripe bananas
2 cups all bran
1 teaspoon vanilla
1 ¼ cup milk
¼ cup eggbeaters
1 ¼ cup Reduced Fat Bisquick
1 teaspoon cinnamon
1/3 cup brown sugar
In a medium bowl mash the banana; add the bran, milk, vanilla, and eggbeaters. Mix to combine.
In a small bowl mix the Bisquick, cinnamon, and brown sugar; add to the wet mixture, stir until just combined, do not over mix. Spray muffin tins with Pam and fill muffin cups.
Bake at 400° for 20 minutes. The muffins are soft when they come out of the oven but they firm up as they cool.
Makes 12 muffins at 1.5 points each.
