Eating one of these cookies is almost like eating a banana chocolate chip muffin!
1/2 cup butter, soften
1/2 cup unsweetened applesauce
1 cup sugar
3 ripe medium bananas, mashed
2 large eggs
1 teaspoon pure vanilla extract
1 1/2 cups all-purpose flour
1 cup whole wheat flour
1 1/2 teaspoons baking soda
2 cups oats
1 cup semisweet chocolate chips
Spoon applesauce onto several layers of heavy-duty paper towels; spread to 1/2 inch thickness. Cover with additional paper towels; let stand 5 - 10 minutes. Scrape into a bowl using a rubber spatula.
Preheat the oven to 350°. Coat 2 baking sheets with cooking spray and set aside.
In a mixing bowl, combine the butter and applesauce and beat with an electric mixer until creamy. Add the sugar, bananas, eggs and vanilla. Beat until smooth. Gradually add the flours and baking soda. Stir in the oats and chocolate chips until incorporated.
Drop the dough by teaspoons onto the prepared baking sheets. Bake for 7 to 10 minutes or until golden brown. Transfer to a wire rack to cool.
