Banana Bread = Yum
I'm a carb addict. Can't you tell?!
½ cup (1 stick) butter
1 ½ cups flour
½ whole wheat flour
1 teaspoon salt
1 ½ teaspoons baking powder
¾ cup sugar
4 very ripe bananas, mashed
1 teaspoon vanilla
½ cup chopped walnuts
½ cup grated unsweetened coconut
Preheat the oven to 350° and grease a loaf pan.
Mix the dry ingredients together (except for the nuts and coconut).
Cream the butter; beat in eggs and banana until smooth. Stir this mixture into the dry ingredients; do not mix more than necessary.
Gently stir in the vanilla, nuts, and coconut.
Pour the batter into the pan and bake for 45 to 60 minutes, until nicely browned. Do not over cook.
Cool on a rack for 15 minutes before removing from the pan.
