Black Bean Sausage Soup


This recipe is actually a recipe from a Weight Watchers book - Two's Company. It makes two servings, but I usually double the recipe to make more and then freeze extras.
The original recipe called for beer, but I don't like beer, so I omitted it.


1 (15oz) can black beans, rinsed and drained, divided
1 ¼ cups water, divided
1 cup diced onion
2 garlic cloves, minced
½ teaspoon chili powder
½ teaspoon ground cumin
¼ teaspoon hot sauce
1/8 teaspoon salt
1/8 teaspoon pepper
3 ounces turkey kielbasa, diced

Place ½ cup of the beans in a blender with ¼ cup water; process until smooth. Set aside.
Sauté onion and garlic about 4 minutes or until tender. Add bean puree, remaining beans, remaining water, and spices; bring to a boil. Cover, reduce heat, and simmer 5 minutes, stirring occasionally. Stir in kielbasa; cook 1 minute or until heated through.
Makes 2 servings at 4 points each.
