Apple and Honey Scones



1 cups finely chopped apple
cup skim milk
cup honey
2 cups flour
2/3 cup toasted wheat germ
2 teaspoon baking powder
teaspoon baking soda
1 teaspoon cinnamon
teaspoon nutmeg
teaspoon salt (optional)
1/3 cup margarine

Topping:
1 tablespoon wheat germ
teaspoon ground cinnamon
1 tablespoon sugar

Preheat oven to 400. Lightly spray a cookie sheet with non-stick cooking spray.
Combine apple, milk, and honey. Set aside.
Combine flour, wheat germ, baking powder, baking soda, spices, and salt. Cut in the margarine until mixture resembles coarse crumbs. Add apple mix and mix until dry ingredients are moistened.
Turn dough onto a lightly floured surface; knead gently 5-6 times. Handle the dough gently; over mixing will make the scones tough. Pat dough into a 9 inch circle. Mix the topping ingredients and sprinkle over dough. Cut dough into 10 wedges and place 1/2 inch apart on prepared cookie sheet.
Bake 16-18 minutes or until golden brown.
Serves 10.
