Apple Cobbler


Okay, I think I like this recipe. But I can't decide for sure. If you make it, email me and tell me what you think!


1 ½ cups flour
¾ cup sugar
1 teaspoon baking powder
1/8 teaspoon cinnamon
pinch ground nutmeg
1 cup fat-free milk
1 egg
1 egg white
½ teaspoon vanilla
3 cups apples (or fresh or thawed frozen peaches)

Preheat the oven to 375°. Spray an 8-inch square baking dish with nonstick spray. Combine the flour, ½ cup of the sugar, baking powder, cinnamon, and nutmeg. Then add the milk, egg, egg white, and vanilla. Mix together and stir until just blended. Layer the apples in the baking dish. Sprinkle with the remaining sugar. Spoon the flour mixture over the fruit.
Bake until the topping is brown and springs back when touched, about 45-60 minutes. Serve hot.
Makes 6 servings at 3 pts per serving.
