Goat Milk Recipes

New recipe for surplus goat milk.... since I know your fridge is as full as ours with delicious goat milk!

I have been tinkering with this recipe for about 6 months now and I just love it. It is very filling and a great way to use surplus milk and goat cheese (soft cream type, but store bought cream cheese works just as well.) Please note that I measure nothing while I am cooking. I taste and adjust, so the measurements are approximate : )

Ingredients

1 large onion, chopped
1/2 cup bell pepper, chopped fine
1/2 cup celery, chopped fine
3 cups stock (beef, chicken, both work fine)
10-15 medium potatoes, peeled and sliced
1/2 gallon goat milk
12 oz cream cheese (1 1/2 packages of store-bought cream cheese) cut into cubes
salt and pepper to taste

Directions: In a large pot add the onion, bell pepper, celery and stock. Simmer, covered, until the veggies are clear and soft. Add the potatoes, cover and simmer some more, stirring every now and then. The stock should cover the potatoes so if it doesn't add more water as needed. Cook until the potatoes are soft and easily broken with a fork. Add milk and cream cheese and stir frequently, breaking up the cream cheese. For a thicker soup, you can mash the potatoes with a fork, potato masher or even a hand mixer (if you want really thick, hearty soup!) Simmer to desired consistency and enjoy.

Variations...this is a very flexible soup. I have made it with beef bouillon cubes, chicken stock made from leftovers, stock made from a hambone, etc. I also like to add a few dashes of soy sauce to my stock and onions (not too much!) because I like soy sauce. When I add the goat milk I have also added chopped cooked spinach, or chopped cooked broccoli, or leftover chicken or ham cut into bite sized pieces. Oh and lowfat cream cheese works too. One time the cheese got kind of rubbery (I think my fire was too high or I just threw it all in and didn't stir), so I blended it with the hand mixer and it was fine. I also use a Cajun seasonings blend sometimes if I want a little more spice. It all works and tastes great.
