Recipes Submitted By My Viewers
Here I am going to post some of the recipes that have been e-mailed to
me from people who have been to my page. I want to thank everyone
who has sent me recipes to try.
Easy Corn Chowder

Cut up and peel potatoes into bite-size pieces (varies
according to size of mouth). Cook in enough chicken broth
to cover potatoes (varies according to how much you like
potatoes). Once cooked (check by tasting), add one can of
creamed corn and green chilies (if you like that kind of
thing). Enjoy once hot.
The recipe is vague because it's fun to experiment and
figure out how you like it.
The next five recipes are from a friend of mine
named Katherine.
Lazy Day Ham
1 thick-cut ready-to-eat ham slice
2 tsp. dry mustard
1/3 cup honey
1/3 cup Port wine (or more as needed) :^)
Rub ham slice with dry mustard, using 1 tsp. mustard for each side.
Place in shallow baking pan. Combine honey and wine; pour over ham.
Bake uncovered in a moderate oven (350°F.) from 35-40 minutes.
Honeyed Lamb Chops
4 loin lamb chops (1-inch thick)
1/4 cup honey
2 tsp. soy sauce
1/4 cup lemon juice
4 onion slices
Combine soy sauce, honey and lemon juice. Mix well. Add lamb and
chill 1 hour, turning occasionally. Remove lamb. Reserve honey
mixture. Broil lamb 3-4 inches from source of heat for 6-7 minutes.
Turn and top with onion slices and broil 6-7 minutes longer.
Brush lamb with honey mixture frequently during cooking.
Cheese Potato Casserole
6 cups sliced cooked potatoes
2 cups (8 ounces) shredded cheddar cheese
2 eggs, beaten
1 1/2 cups milk
2 tsp. salt
1/8 tsp. nutmeg
In casserole, layer half the potatoes and half the cheese. Repeat
layers. In a bowl combine eggs, milk, salt, and nutmeg. Pour egg
mixture over potatoes and cheese. Bake 30 minutes at 350°F.
Frosted Mocha Milk
2 pints coffee ice cream
1/2 cup chocolate syrup
1/4 cup instant coffee powder
2 quarts milk
In a blender or mixer, beat ice cream, chocolate syrup, coffee and
part of the milk until well blended. Combine with remaining milk and
chill before serving.
Skillet Macaroni & Cheese
1/4 cup (1/2 stick) butter
1 cup chopped onion
1 Tbsp. flour
1 1/2 tsp. salt
1/4 tsp. leaf oregano
1 pack (7-8 ounces) elbow macaroni
3 1/2 cups milk
2 cups (8 ounces) shredded cheddar cheese
In a skillet melt butter. Add onion and saute until tender. Stir in flour,
salt and oregano. Add macaroni and milk. Cover and bring to boil.
Reduce heat and simmer 15 minutes or until macaroni is tender,
stirring occasionally. Add cheese and stir until cheese is melted.
(DO NOT BOIL!)
Bessie LeBlanc's Hamburger Pie

1 pie shell. Bake in pie plate at 350°F. about 12 minutes.
While pie shell is baking mix in a bowl:
1 pound ground beef
1 medium onion, finely chopped
1 celery rib, chopped
1 small bell pepper, chopped
salt and pepper to taste.
2 tsp. minced garlic
1 egg
3/4 cup dry potato flakes
When pie shell has cooled, put meat in and spread evenly. Bake at 350°F.
for an hour. While pie is baking, boil your potatoes
and fix cream potatoes to your liking. When pie is done,
spread mashed potatoes on meat and top with shredded cheese.
Heat till cheese melts. Serve with a salad. Enjoy.
Stir Fry

This recipe is fast and provides a whole meal in one pan,
an excellent recipe for children or a beginning cook.
oil
1 medium-size steak
1 large-size broccoli
1 small onion or 1/4 of a large one
1/3 pound (or less) bean sprouts
1/2 cup cornstarch
small bottle of oyster-flavored sauce
soy sauce
Roll steak and cut into thin strips. Marinate the strips for
about 10 minutes in soy sauce and/or beer. Roll the strips
in the cornstarch. Heat a frying pan over a medium flame.
Chop the onion and throw it in; remove once it turns golden and soft.
Chop the broccoli and throw it in, stirring until it becomes a dark
green. Now add about 1/2 cup of water, lower flame, cover and let
sit for about 10 minutes, or until crispy tender. Don't overcook!
Remove broccoli and turn up flame, cook meat until done or
almost done, add about 1/2 cup water, the onions, the broccoli,
and about 3 Tbsp. or more of the oyster-flavored sauce. Stir and
allow to simmer for about a minute. Add the bean sprouts to the
mixture last and cook until they become plump but not soft - about 2
minutes. Serve over white rice. Add soy sauce to taste.
