What Am I Cooking?
I am going to try to bring here recipes of what I am cooking. Some of them
will be new recipes and some of them will be recipes from my page.
I hope you enjoy this section.
This recipe was designed because I had plans to make a beef stew one
night. I had already bought the stew meat, but the other half said she wasn't
in the mood for stew. It was either throw the meat away or wing it. This
is what I came up with.
Choppy's Oddball Roast
2-3 lbs. stew meat
5-6 large potatoes
1 lb. carrots, cut up
1 medium onion, sliced
salt
pepper
minced garlic
2 Tbsp. honey
2 cans Rotelle diced Tomatoes and Chilies
In 1/4 cup of oil, brown the stew meat over a low fire. Cook for about
30 minutes and then add the onions. Continue cooking until the onions are
tender. Peel and quarter the potatoes and boil them until you can insert a
fork into them easily. Boil the carrots in a pan with the honey added.
Drain the potatoes and carrots and add them to a baking dish. Add the meat,
onions and drippings to the baking dish. Add 1 tsp. of minced garlic and
the Rotelle tomatoes. Cover the dish and bake in a preheated 350°F
oven for about an hour.
I have tried a few cobbler recipes before and they always seemed to be
lacking something. Then I tried this.
Choppy's Favorite Cobbler
1/2 cup sugar
1 egg
1/2 cup oil
1 cup sifted flour
1/3 tsp. baking soda
1/3 tsp. vanilla
1/3 tsp. salt
1/4 cup chopped walnuts
1 can apple pie filling
Mix the sugar, egg, and oil well. Blend in the everything else except
the pie filling. In a baking dish, spread the pie filling evenly and
then spead the batter over the filling. Bake at 350 degree for 20
minutes until your able to insert a tooth pick into the crust and
it comes out clean.
One day I wanted to make a cake. I found this recipe, but when it said
to add it to a bundt pan, I wasn't able to because I didn't have one. So
I made muffins instead and they became a family favorite.
Chop's Apple Nut Muffins
1 1/2 cups sugar
3 eggs
1 1/2 cups oil
3 cups sifted flour
3 fresh apples, peeled and diced
1 tsp. vanilla
1 cup walnuts or pecans
1 tsp. soda
1 tsp. salt
Blend the sugar, eggs and oil. Add the flour, vanilla, soda and salt.
Mix well. Add the apples and nuts. Pour into a non-stick muffin pan and bake
at 325°F for 20 minutes. When you can insert a toothpick
into the muffins and it comes out clean, then they are done.
