Amazing Coconut Pie

Amount Measure Ingredient -- Preparation Method

2 cups milk
3/4 cup sugar
1/2 cup biscuit mix (Bisquick)
4 eggs
1/4 cup butter -- softened
1 1/2 teaspoons vanilla
1 cup coconut

Combine milk, sugar, biscuit mix, eggs, butter and vanilla in electric blender container. Cover and blend on low speed for 3 minutes. Pour into greased 9 inch pie pan. Let stand about 5 minutes, tehn sprinkle with coconut. Bake at 350 degrees for 40 minutes.

Annie's Apple Pie

7 tart apples -- pared, cored, and thinly sliced (6-8 c.)
1 c. sugar
2 T. flour
1/2 t. ground cinnamon -- (1/2 to 1)
1 Dash ground nutmeg
1 Dash salt
Pastry for 2 crust 9 inch pie
2 T. butter or margarine

Combine sugar, flour, spices, and dash salt; mix with apples. Line 9" pie plate with pastry. Fill with apple mixture; dot with butter. Adjust top crust, cutting slits for escape of steam; seal. Sprinkle with sugar, or cinnamon sugar (I use cinnamon sugar). Bake at 400 for 50 minutes or until done.

Cool and Easy Pie

2/3 cup boiling water
1 package Sugar-free Jello, any flavor -- (.3 oz)
1/2 cup cold water
ice cubes
1 carton Cool Whip Free, thawed -- (8 ounces)
1 prepared reduced fat graham cracker crust

Stir boiling water into gelatin in large bowl at least 2 minutes until
completely dissolved. Mix cold water and ice to make 1 cup. Add to
gelatin, stirring until slightly thickened. Remove any remaining ice.

Stir in whipped topping with wire whisk until smooth. Refriterate
15-20 minutes or until mixture is veyr thick and will mound. Spoon
into crust.

Kentucky First Saturday In May Pie

1 stick margarine -- melted
1 c. sugar
2 eggs
1 tsp. vanilla extract
1/2 c. flour
1 c. chocolate chips
1 c. pecans
1 unbaked pie shell

Preheat oven to 350 degrees. Set aside melted margarine to cool. Mix sugar, eggs and vanilla. Add flour, chocolate chips and pecans. Add cooled margarine, stir and pour into unbaked pie shell. Bake for 45 minutes at 350 degrees.

Mom's Chocolate Pie

3 egg yolks
1 1/2 cups sugar
3 tablespoons cocoa
1 1/2 cups milk
3 tablespoons flour
1 teaspoon vanilla
1 tablespoon butter
1/8 teaspoon salt

Mix sugar, flour, and cocoa; add enough milk to make a heavy paste. Beat in the egg yolks; add the remaining milk, butter, vanilla, and salt. Cook until thickened. Bake in crust at 400 degrees about twenty minutes. Top with meringue.

Mom's Raisin Pie

1 cup raisins
2 cups water
2/3 cup sugar
3 tablespoons flour
1 tablespoon butter

Cover raisins with water; bring to a boil; simmer until raisins are soft and puffy. Mix flour with sugar; stir into first mixture and cook slowly until thickened. Pour into unbaked crust, cover with second crust. Make slits in top crust to let steam escape. Bake at 370 degrees until brown.
