Question: What do you do if you find that the yeast you used is bad?
First do not rip up and down your distrubutor for stocking bad yeast!
Every now and again you'll get a bad packet of yeast. A packet costs less than $1.00 so
just pick up another packet.
It probably took you a day or two to realize that your yeast is not reacting with your brew.
First take the SG. If it's less than 1, the yeast is good.
It just finished quickly. Rack it to your carboy.
If the SG is the same as when you put down your beer,
let it sit for another day or two. This will give the yeast a chance to fall through.
If you're lucky the yeast is just slow and will activate during this time.
If not, just transfer and start over with a fresh packet of yeast.
To check before hand to see if your yeast is active, fill a container with a water and sugar solution.
When the solution is at room temperature add your yeast to the solution.
Gently stir the yeast into the solution. Don't stur too much!
(You just want to stir the yeast into the solution. If you stur too much or too vigorously,
you will smother the yeast and it will not react with the sugar.)
This should get the yeast activated. Once you see the yeast is active, just mix the solution into your brew
(mix gently) and let sit.
If you do this when you initially prepair your brew, assuming your brew is at room termerature,
this can cut as much as a day to a day and a half off of your brewing time.
