Shortbread Cookies

2 Points Per Serving

 

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/4 cup pourable Sugar Twin

1/2 cup reduced-calorie margarine

2 teaspoons vanilla extract

 

1. Preheat oven to 375º F. Spray 2 baking sheets with butter-flavored cooking spray. In a medium bowl, combine flour, baking powder, and Sugar Twin. Add margarine and vanilla extract. Mix well with a fork until crumbly. Mix gently with fingers until mixture will form into a ball. Form into 16 balls and place on prepared baking sheets. Flatten cookies with the bottom of a glass. Bake for 8 to 10 minutes or until bottoms are lightly browned. Lightly spray tops with butter-flavored cooking spray. Place cookies on a wire rack and allow to cool completely.

Serves 8 (2 each).
