Malted Milk Cookies

1 Point Per Serving

 

1 cup all-purpose flour

1/4 cup instant chocolate malted milk powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup firmly packed brown sugar

1/4 cup granulated sugar

1/3 cup margarine softened

1/4 cup refrigerated egg substitute

1 teaspoon vanilla extract

12 malted milk balls, coarsely chopped

 

Preheat oven to 350º. Spray 2 baking sheets with vegetable cooking spray. In a medium bowl, combine flour, malted milk powder, baking soda, and salt. Mix well. In a large mixing bowl, using an electric mixer set on medium speed, beat together brown sugar, granulated sugar, and margarine until light and fluffy. Beat in egg substitute and vanilla. At low speed, beat flour mixture into brown sugar mixture until a soft dough forms. Stir in malted milk balls. Drop dough by rounded teaspoonfuls, 1 inch apart, onto prepared baking sheets. Bake cookies until golden, about 12 minutes. Place baking sheets on wire racks and cool slightly. Place cookies on racks; cool completely.

Makes 32 cookies.

Freezer: Shape dough into a log. Wrap it in freezer wrap and freeze for up to 1 month. To bake, thaw dough and cut into slices. Proceed as recipe directs.

Cooking Tips: Malted milk powder is made from processed barley and is available plain or chocolate-flavored. It is delicious added to milk shakes or baked goods. Process the malted milk balls in a blender or food processor instead of chopping them with a chef's knife. Process them just until coarsely chopped.
