1 1/2 LB LOAF

1 1/3 cups water

3 tablespoons vegetable oil

3 tablespoons molasses

1 1/2 teaspoons salt

2/3 teaspoon cinnamon

1 1/3 cups oat bran

1 cup whole wheat flour

1 2/3 cups bread flour

1/3 cup nonfat dry milk powder

1 1/2 tablespoons gluten

2 1/2 teaspoons yeast

1/3 cup pear -- diced

1/3 cup raisins

1/3 cup dried apricots -- chopped

Bake according to manufacturer's instructions, adding the fruit during the raisin bread cycle, or five minutes before the final kneading is finished.

Makes 12 thick slices

NOTES: A nice, fruity oat bran bread that is light and moist. Its texture reminds me of a muffin, and I love it for breakfast or as a midafternoon snack.. Feel free to alter the combination of fruits as the season and your moods change. Berries are especially nice in the summertime.

JENN'S LOWER FAT NOTES: Use unsweetened applesauce instead of oil.
