Easy Chocolate Pudding Cake

4 Points Per Serving

 

1 (10oz.) package reduced-fat devil's food cake mix

1/2 cup plus 2 TBS. fat-free milk

2 TBS. nonfat sour cream

1 tsp. vanilla extract

1 (4oz.) jar sweet potato baby food

Vegetable cooking spray

1/4 cup firmly packed brown sugar

2 TBS. unsweetened cocoa

1&1/4 cups boiling water

1/2 cup plus 1 TBS. frozen reduced-calorie whipped topping thawed.

 

Combine first 5 ingredients, stirring well. Spoon batter into an 8-inch glass baking dish coated with cooking spray. Combine brown sugar and cocoa; sprinkle over batter. Pour boiling water over batter (DO NOT STIR). Bake at 350º for 30 minutes. Remove from oven, and let stand for 5 minutes. Spoon cake into individual serving bowls; top each serving with 1 TBS. whipped topping.
