Carrot-Raisin Snack Cake

1 (18.25 oz) package spice cake mix -- such as Duncan Hines Moist Deluxe

1 cup water 1 large egg -- lightly beaten, or 1/4 cup Egg Beaters® 99% egg substitute

1 cup shredded carrots

3/4 cup raisins nonstick cooking spray

1/2 cup chopped walnuts

 

1. Preheat oven to 350º F.

2. Combine first 3 ingredients in a bowl; stir with a whisk until blended. Add carrot and raisins; stir well. Pour into a 13 x 9 inch baking pan coated with cooking spray; sprinkle walnuts over batter. Bake at 350º F for 35 minutes or until a wooden pick inserted in center comes out clean. Cool in pan on a wire rack.
