Strawberry Rhubarb Crisp

4.5 Points Per Serving

 

3/4 cup low-fat granola w/out raisins

1/4 cup flour

1 1/2 tablespoons brown sugar

2 tablespoons reduced-calorie margarine

1 cup sugar

3 tablespoons cornstarch

8 cups chopped rhubarb

2 cups sliced strawberries

 

Mix granola, flour, brown sugar and margarine in bowl and set aside. Mix sugar and cornstarch. Set aside 3 tablespoons for later. Mix rhubarb with remaining sugar/cornstarch mixture. Toss gently and spoon into 9 X 13 pan sprayed with Pam. Bake 325 for 25 minutes. Remove.

Increase temp to 375.

Mix the reserved sugar/cornstarch with strawberries. Spoon over rhubarb. Sprinkle with granola mixture.

Bake at 375 for 15 minutes. Serve with FF cool whip.
