Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
  14 manicotti
  3 1/2 cups marinara sauce
1 cup nonfat mozzarella cheese -- shredded
                        **Filling**
3 1/2 cups nonfat ricotta cheese
10 ounces frozen chopped spinach -- thawed and squeezed dry
     1/4 cup egg substitute
     1/2 cup nonfat parmesan cheese
Cook the manicotti al dente according to package directions. Drain well, and set
aside.
To make the filling, place all of the filling ingredients in a large bowl, and
stir to mix well.
Using a small spoon, stuff about 1/3 cup of the filling mixture into each tube.
Spoon a thin layer of the sauce over the bottom of a large baking pan, and
arrange the filled pasta in the pan.
Pour the remaining sauce evenly over the manicotti. Bake uncovered at 350º for
about 30 minutes, or until heated through. Sprinkle the mozzarella over the top,
and bake for 10 additional minutes, or until the cheese has melted. Remove the
dish from the oven, and let sit for 10 minutes before serving.
