Ham and Broccoli Cornbread

Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces cornbread mix 1 medium onion -- chopped and sautéed 2 egg whites -- lightly beaten 1/2 cup skim milk 3 tablespoons olive oil 1 cup creamed corn, low calorie 4 ounces lowfat cheddar cheese dash red pepper -- more if you want 1 teaspoon chili powder 2 cups frozen broccoli -- defrosted 2 cups lean ham salt and pepper -- to taste
Cook onions until tender with nonstick spray. In large bowl, mix cornbread mix, onions, beaten eggs, milk, olive oil, cream corn, cheese, red pepper, chili powder, broccoli, ham, salt and pepper. Blend well. Pour into 9 x 13 pan (spray with nonstick spray). Preheat oven to 375º. Bake for 30-35 minutes. Good with a salad!

NOTES : Donna's Notes: I found this recipe in the paper the other day. It turned out real good, so I wanted to pass it on to all of you. Mexican Cornbread has always been one of my favorites. This turned out just as good without all of the fat. The ham makes a good substitute for the sausage. I have found that Albertson's brand of ham has the lowest fat grams and best taste. It does not have that sweet taste. The ham has approximately 4 grams of fat. I plan next time to try it with 4 eggs whites to lower the fat content. Enjoy!
