Chocolate Almond Muffins

Dear Chocolate lovers:
I loved the recipe for Pumpkin Muffins, I also love chocolate so I put my thinking cap on, and came up with a recipe for chocolate almond muffins :) They are high-fiber,and hit the spot for something chocolate, and filling.....try it and see what you think.....
2 cups fiber one cereal (120 grams)
1 cup skim or 1% milk
1 tsp. salt
1 Tbsp. baking powder
1 egg
1/4 cup Hershey's Cocoa
1 1/2 cup flour
6 oz unsweetened applesauce
1/2 cup brown sugar
2 tsp. almond extract
Cooking Spray
Mix cereal with milk and let sit for 5 minutes. Add salt, baking powder, egg, applesauce, almond extract, and brown sugar to cereal and milk, and stir until smooth. Add Hershey's Cocoa and stir until blended. Add flour, and when blended pour into sprayed muffin pan.
Makes 12 muffins at 2 1/2 points each....
Bake at 400º for 15-17 minutes. I let them cool, and then freeze a few for later..
