This is a crunchy, wonderfully satisfying salad that is wonderful with grilled chicken or leftovers from yesterday's barbecue. The dressing is sweet and sour. Fried rice noodles add the crunch. *Serves 6
2 Tablespoons brown sugar
2 Teaspoons soy sauce
1 Tablespoon sesame oil (optional)
1/4 cup of vegetable or olive oil
3 Tablespoons rice vinegar
1 (5 oz) can chow mein noodles
1 head of any lettuce, rinced, dried and chopped
4 boneless chicken breasts halved, cooked and shredded
3 green onions, chopped
1) Prepare the dressing 30 minutes ahead of time combining the brown sugar, soy sauce, sesame oil, salad oil, and rice vinegar in a salad dressing carafe.
2) In 6 individual bowls, break up the lettuce and sprinkel with green onions. Lay shredded chicken on top and pour salad dressing over all. Lastly, sprinkle with chow mein noodles. Serve immediately.
