
Dr. Emerson's research interests include enzymology, the oxidation of wine, and the production of hydrogen gas via coal gasification. David and Rickie are studying the mechanism by which wine oxidizes.
Our wine studies include both red and white wines. David is currently studying the species oxidized and those produced during the oxidation of red wine. Our primary interest is the role of transition metal complexes that we believe facilitate the reaction between oxygen and the organic species making up the wine medium. Rickie is studying the same process in white wine.
