Banana Choc-Chip Muffins

2 cups self-raising flour

½t salt

½ cup sugar

½ cup choc chips

100g melted butter

1 cup milk

1 egg

1 cup mashed bananas

Optional Toppings: 1t sugar, ½t cinnamon, extra choc chips

Directions:

Stir dry ingredients together with a fork in a large bowl.

In another bowl, beat the butter, milk and egg together.

Mash the bananas and stir them into the liquid.

Tip all the liquid into the dry mixture and fold everything together until just mixed.

Put mixture into greased muffin tins.

For topping, mix sugar and cinnamon and sprinkle over the muffins, then top with a few extra choc chips.

Bake at 200C for 12-15 mins. Stand for a few mins before removing from pans.

EAT!

Scones

2 cups flour

4 tsp. baking powder

½ tsp. Salt

50g Butter

¾ cup Milk

1. sift flour, baking powder and salt into a bowl.

2. Cut the butter into the flour until the mixture looks like breadcrumbs.

3. Make a well in the middle of the dry ingredients and add the milk.

4. Mix with a knife until mixture forms a dough (do not over-mix).

5. Turn the dough onto a lightly floured bench and pat into shape.

6. Roll out ½ inch thick, cut into squares with a sharp knife.

7. Place on an un-greased tray, and bake for 0 - 12 minutes at 220ºc until golden brown.

8. Serve hot with butter.

(To make cheese scones add ½ cup of grated cheese to the sifted flour and baking powder. Cheese scones are delicious with soup for a winter lunch.)
