Cranberry Cheese Bars

2 cups all-purpose flour
1 1/2 cups quick-cooking or old-fashioned oats, uncooked
3/4 cup plus 1 tablespoon firmly packed light brown sugar, divided
1 cup butter or margarine, softened
1 3/4 cups M&M's chocolate mini baking bits, divided
1 8-ounce package cream cheese
1 14-ounce can sweetened condensed milk
1/4 cup lemon juice
1 teaspoon vanilla extract
2 tablespoons cornstarch
1 16-ounce can whole berry cranberry sauce

Preheat oven to 350 degrees F. Lightly grease 13x9x2-inch baking pan; set aside. In large bowl combine flour, oats, 3/4 cup sugar and butter; mix until crumbly. Reserve 1 1/2 cups crumb mixture for topping. Stir 1/2 cup M&M's into remaining crumb mixture; press into prepared pan. Bake 15 minutes. Cool completely. In large bowl beat cream cheese until light and fluffy; gradually mix in condensed milk, lemon juice and vanilla until smooth. Pour evenly over crust. In small bowl combine remaining 1 tablespoon sugar, cornstarch and cramberry sauce. Spoon over cream cheese mixture. Stir remaining 1 1/4 cups M&M's into reserved crumb mixture. Sprinkle over cranberry mixture. Bake 40 minutes. Cool at room temperature; refrigerate before cutting. Store in refrigerator in tightly covered container.

Pumpkin Squares and Frosting
1 cup oil
2 cups sugar
2 cups can pumpkin
4 eggs
2 cups flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1/4 teaspoon nutmeg

Mix all ingredients together in a large bowl with your mixer. Pour into greased 11 x 15 jelly roll pan or cookie sheet with sides. Bake for 20-25 minutes in a 350 degree oven.
Frosting
3 oz. cream cheese (room temperature)
1 teaspoon vanilla
3/4 stick butter or margarine (room temperature)
1 tablespoon milk
1 3/4 cups powdered sugar
Mix together and spread on bars.

LANCASHIRE HOTPOT

Ingredients:
4 lamb chops
1 Onion - skinned and sliced
1 Ib potatoes - peeled and sliced
salt and pepper
1/2 pint stock
Method:
Remove any excess fat from the chops and put them in a casserole dish. Arrange the sliced onions on top, then the sliced potatoes on top of the onions. Season with salt and pepper and add the stock. Cover and cook in the oven at 170 C for 2 hours, then remove the lid and brown the top layer of potatoes in the oven at 220 C for 20 minutes

West Virginia Apple-Black Walnut Cake
4 c. apples, coarsely chopped
2 c. all-purpose flour, sifted
2 c. sugar
2 tsp. baking soda
2 eggs
2 tsp. cinnamon
1/2 c. vegtable oil
1 tsp. salt
2 tsp. vanilla
1 c. black walnuts, chopped

Combine apples and sugar; let stand. Beat eggs slightly; beat in oil and vanilla. Mix and sift flour, baking soda, cinammon, and salt; stir into egg mixture. Stir in walnuts, pour into greased and floured 9x 13x 12 inch oblong pan. Bake at 350 degrees about one hour or until cake tests done. Let stand in pan until quite cool. Turn out on rack to complete cooling.
