Hot Buttered Rum Cake
  • 3 cups flour
  • 2 cups sugar
  • 1 cup butter, softened
  • ¾ cup buttermilk
  • 4 eggs
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup dark rum
  • 2 tsp vanilla extract
  • ¾ cup confectioner's sugar
  • 1 tsp dark rum
  • 1 tsp milk

  • in a large mixing bowl combine flour, sugar, butter, buttermilk, eggs, baking soda, baking powder, salt, ½ cup rum & vanilla
    mix well
    pour batter into a greased & floured 10" tube pan
    bake for 1h @ 350° F or until wooden toothpick inserted in center comes out clean
    cool 10 min
    remove cake from pan
    in a small bowl stir together the confectioner's sugar, 1 tsp rum & milk
    drizzle over cake
    makes 16 servings
