Pointe Blanche Pigeon Pea Soup
  • 4 qts water, ¾ tps salt added
  • 1 ham bone
  • 1 onion, sliced
  • 2 carrots, peeled & diced
  • 2 stalks celery, chopped fine
  • 4 springs parsley, chopped
  • 1 Idaho potato, peeled & chopped
  • 2 lbs green pigeon peas

  • bring salted water to a boil in soup kettle
    add next 6 ingredients and simmer 30 minutes
    add peas
    simmer 20 to 25 minutes longer, till peas are tender
    makes 4 servings
