Kingfish Creole
  • garlic butter
  • 4 kingfish steaks
  • salt & pepper, to taste
  • garlic butter
  • 2 onions, sliced
  • 1 tomato, chopped
  • 1 tbsp vinegar
  • 3 tbsp lemon or lime juice
  • 1 tsp dried basil
  • ½ tsp dried thyme
  • ½ cup water
  • 2 tsp butter

  • brush fish w/ garlic butter
    season w/ salt & pepper
    grill till done
    combine remaining igredients in a saucepan & bring to a boil
    simmer 15 to 20 minutes till vegetables are tender
    spoon sauce over fish
    makes 4 servings
