Creole Clam Chowder
  • 1 onion, sliced
  • 1 clove garlic, chopped
  • 3 tbsp olive oil
  • 1 tbsp ea dried basil & oregano
  • 1 tsp dried thyme
  • ½ tsp cayenne pepper
  • 1 (l6 oz) can whole tomatoes, undrained
  • 1 large potato, diced & cooked
  • 2 bay leaves
  • 1 (10-oz) can whole clams in juice
  • ½ cup red wine
  • salt & pepper, to taste

  • in soup kettle, sauté onion & garlic in oil
    add next 4 seasonings & juice from tomatoes
    cover & simmer for 5 minutes
    coarsely chop tomatoes & add to pot along with next 4 ingredients
    season w/salt & pepper
    simmer 20 to 30 minutes, uncovered
    add water if needed
    makes 4 servings
