6.0 lbs Plain Light Malt Extract

3.3 lbs. Amber Malt Extract

1 lb. Light DME

1 lb. US Crystal malt (30 L)

0.125 (1/8) lb. Roasted Barley malt

0.5 lb. Flaked barley

1 lb. 2-row English Peated Malt

1.5 oz Cascade hop pellets (75 mins.)

1.5 oz Kent Goldings hop pellets (20 mins.)

1.5 oz Willamette hop pellets (10 mins.)

1.0 tsp.Irish Moss (15 mins.)

White Labs WLP028 Edinburgh Ale Yeast and/or 1 pkg. Munton & Fison Ale Yeast

1-1/3 C Light DME (for priming)

Crush grains and steep in 1/2 gal water @ 150o F for 20 minutes. Strain the water from the grains into your brewpot.

Remove pot from heat and add extracts, DME and Cascade hops. Boil for 75 minutes.

Add Kent Goldings hops for 20 minutes.

Add Irish Moss for 15 minutes and Willamette hops for 10 minutes. Remove pot from heat and cool.

Chill wort and pitch yeast.

Primary ferment @ 72 o F for 9 days. Rack to secondary @ 72 o F for 14 days.

Bottle with 1-1/3 cup Light DME and wait 3 weeks.
