Quick and Easy Recipes

Boy, have times changed! My recipes from this page are going to be replaced with some newer, healthier recipes. In the past 8 weeks, I've lost nearly 25 lbs! Never thought I'd hear myself say that! Turning 30 has changed a lot about my way of thinking, so I'm going to try to share some of my knowledge with you! Enjoy!
Chicken Pot Pie
1 C. Reduced fat Biscuick 1/2 C. Skim Milk 1/4 C. Egg substitute 2 C. mixed vegetables, thawed 2 C. cooked chopped white chicken (I boil in 98% fat free chicken broth til done) 2 cans 98% fat free cream of chicken or mushroom soup Preheat oven to 400 degrees. Spray 8 x 8 x 2 casserole dish with lite cooking spray. Mix veges, chicken, and soup. Pour into casserole dish. Mix Bisquick, egg, milk. Pour over chicken mixture. Bake 30 minutes or til crust is brown. Enjoy!
Egg McMuffin
1/4 C. Egg Subsititute 1 Lite English muffin (WalMart, on bread aisle) Spray skillet with lite cooking spray. You can add any vegetable to your eggs that you like (bell peppers, onions, even fat free cheese if you like). Cook till done. Set aside on plate. Split apart muffin and put face down on warm skillet. Muffin will soften as it warms. You can even melt cheese on it while in skillet. Use your imagination! I like mine plain with a tbsp of sugar free jelly/jam on it!
