The stalke of Clot-burre before the burres come forth, the rinde pilled off, being eaten raw with salt and pepper, or boyled in the broth of fat meate, is pleasant to be eaten... Also it is a good nourishement, especially boyled: if the dernell of the Pine Apple be likewise added it is the better.
This traditional Welsh brew, sometimes referred to as an "ale" or even a "wine," claims to have healing properties. It also tastes great, especially considering the ingredients used.
To make the brew, pick two quarts of fresh nettle leaves, using rubber gloves to avoid being stung. Simmer the nettle leaves with 3 oz hops and 3 oz chopped burdock in five quarts of water for 45 minutes. Strain the mixture, and then stir into the strained liquid 2 lb sugar and the juice of a lemon. Allow to cool, sprinkle the yeast on top, cover, and leave overnight before bottling in airtight containers. Allow to mature for two days before using.
