        Easy Party Foods

        Bacon Wafers

        Wrap 1/2 slice of bacon around a saltine.
        Microwave on high about 1 min. till bacon is done.
        You may make more than 1 at a time.
        I just follow my microwave direction for slices of bacon.


        Barbequed Pecans

        2 Tbl melted butter
        1/4 cup worcestershire sauce
        1 Tbl catsup
        1/8 tsp hot sauce
        4 cups pecan halves
        salt (optional)

        Combine first 4 ingredients; stir in pecans and mix well.
        Spread pecans evenly in a shallow baking pan. Bake at
        300 degrees for 30 minutes, stirring frequently.


        Ham Cheese Ball

        1 6oz. can ham
        1 8 oz. cream cheese
        1 tsp. cayan pepper
        1/2 tsp garlic powder
        1/2 tsp salt
        1/2 cup crush pecans

        Squish first 5 ingredients all together
        and form a ball. Chill till firm
        and roll in pecans. Serve with crackers.


        Cheese Straws

        1 lb. sharp cheese, grated
        1 1/2 stick butter
        1/2 tsp. salt
        2 1/2 cups sifted flour
        cayenne pepper, to taste

        Cream cheese and butter. Add other ingredients.
        Mix well. Pinch off a nickel size piece
        of dough; flatten with a fork. Bake at 350
        for 10 to 15 minutes.


        Peach Punch

        2 qts. boiling water
        3cups sugar
        1 16 oz. lemon juice
        1 46 oz. pineapple juice
        1 64 oz. peach cola
        2 qts. crushed ice

        Combine sugar and water; stir to dissolve.
        Add juices; chill. Add cola and ice at serving time. Serves 40.


        Home Cooked Breads

        Calico Bell Pepper Muffins

        1/4 cup each chopped red, yellow and green peppers
        1/4 cup butter
        2 cups plain flour
        2 Tablespoon sugar
        1 Tablespoon baking powder
        3/4 teaspoon salt
        1/2 teaspoon dried basil leaves
        1 cup milk
        2 eggs

        Pre-heat oven to 400. Grease or line muffin pans. In small skillet
        over medium heat, cook peppers in butter till bright colored and
        tender crisp, about 3 minutes. Set aside. Combined dry ingredients together
        in large bowl. In small bowl combined milk and eggs, blend well.
        Combined everything including the liquid from skillet and
        stir until moist. Spoon unto cups and bake for 15 minutes.


        Mayonnaise Biscuits

        3 cups self rising flour
        1 1/2 cups milk
        1/4 cup mayonnaise

        Mix all ingredients together. Drop by spoonfuls
        onto a greased pan. Bake at 400 for 15 minutes or
        until golden brown.


        Yummy Desserts

        Pralines

        3/4 cup canned milk
        1 pound box light brown sugar
        3 Tablespoons butter
        1 cup nuts (pecans)

        Boil first 3 ingredients to a hard ball stage.
        Beat slightly and add nuts. Drop by
        teaspoons quickly on wax paper.


        Girdle Busters

        1 box yellow cake mix
        1 egg
        1 stick margarine, melted
        8 oz. cream cheese, soft
        1 box confectioners sugar
        2 eggs

        Mix cake mix, egg and margarine; pat into 9" x 13" pan.
        Mix cream cheese, confectioners sugar and eggs; spread
        over first layer. Bake at 350 degrees for 40 to 50 minutes.


        Chocolate Bakeless Cookies

        2 cups sugar
        1 stick margarine
        1/2 cup milk
        1 1/2 cup oatmeal (quick cooking)
        1/2 cup cocoa
        1 cup chopped nuts (peanuts are good)

        Mix sugar, margarine, and milk. Bring to a boil;
        cook 2 to 3 minutes. Stir in oats, cocoa,
        and nuts. Beat until it begins to look dull
        and drop by spoonfuls onto wax paper.
        Cool until firm. Makes about 3 doz.
        "If you like omit the nuts and add another 1/2 cup of oatmeal"


        Pecan Pie

        1 pie shell
        1/4 cup butter
        1/2 cup sugar
        1 cup light corn syrup
        3 eggs, beaten
        3 tsp. vanilla flavoring
        1 cup chopped pecans

        Cream butter, add sugar, syrup and eggs. Mix well.
        Add vanilla and pecans. Stir and pour into pie shell.
        Bake 45 minutes at 350 degrees.


        The Main Course

        Cornish Hens & Rice Stuffing

        4 cornish hens
        1 cup water
        salt
        1/2 cup melted butter
        1 box long grain wild rice (Uncle Bens)
        2 boiled eggs (chopped)
        4 teaspoons chopped onion

        Wash hens, sprinkle with salt. Place in baking pan: add water.
        Bake at 400 for 30 minutes. Brush with melted butter and bake 15 minutes more.
        Prepare rice with 1 Tablespoon butter and 2 cups stock from
        hens. Add seasoning packages,eggs and onion. Place rice around and in hens
        and cook another 15 minutes.


        Easy Chicken Pie

        1 1/2 cup chicken broth
        1 can cream of chicken soup
        4 cups cooked, chopped chicken
        1 (10 1/2 oz) frozen mixed vegetables
        1 stick butter, melted
        1 cup flour
        1 cup milk

        Mix broth and soup in 2 qt. casserole. Add meat and vegetables. Combine butter, milk and flour, stir but do not over mix. Pour batter over chicken mixture. "Do not stir". Bake at 350 for 30 minutes or until brown.


        Burnswick Stew

        1 small fryer
        1 lb. ground pork
        1 lb. ground beef
        2 or 3 diced potatoes or can dice potatoes
        hot sauce to taste
        3 cans tomatoes
        2 cans whole kernel corn
        1 1/2 bottle catsup 2 diced onions
        salt and pepper to taste
        1 can cream corn

        Boil and de-bone fryer. Cook and drain ground meats. Combine
        all ingredients except creamed corn. Add seasoning and simmer 1 1/2 hours.
        Add creamed corn at the last. Makes about 3 1/2 qts.


        Veggies and More

        Skillet Fried Corn

        4 slices bacon
        3 cups cut fresh corn
        1/4 cup chopped green pepper
        salt and peper to taste

        Cook bacon until crisp; drain and crumble. To dripping, add
        corn and peppers. cover; cook over low heat until
        just tender, 5 to 8 minutes.
        Sprinkle bacon over top.


        Caramel Sweet Potatoes

        1 can (1 lb. 7 oz.)syrup packed sweet potatoes, drained
        1/2 tsp. salt
        1/4 cup caramel or butterscotch sundae sauce

        Cut potatoes in half and arrange in single layer
        in a shallow baking dish. Sprinkle
        with salt. Pour sauce evenly over potatoes.
        Bake at 375 degrees for 30 minutes. Makes 5 servings.


        More Than Just Salads

        Cabbage Salad

        1 small cabbage
        1/4 head red cabbage
        3 firm tomatoes
        1 small jar dill spears
        1 Tbl poppy seed
        1/2 to 1 cup mayonnaise

        Cut cabbage into bite size pieces. Cut tomatoes and dill spears into chunks.
        Combine all ingredients. You can add a little sugar if you like.


        7-layer Salad

        1 large head of lettuce, shredded
        1 cup diced celery
        1 large green pepper, chopped
        1 small onion ,chopped
        1 can (10 oz.)green peas, drained
        2 cups mayonnaise (you may add a little sugar if you like)
        1 cup grated cheese

        Use a flat dish and layer in order beginning with lettuce
        and ending with cheese. Best if you
        refrigerate over night.


        Things To Try

        Season green beans without fat by add diced onion and chicken bouillon.

        Chicken bouillon adds flavor to many dishes ~ without fat: cabbage, creamed potatoes, mixed vegtables,etc.

        Add a tablespoon of vinegar to a cake mix and you will get a more homemade taste.
