This is my recipe page. These are tried, tested and true favorites. I am always looking for new recipes, though, so if you have a favorite that you would like to share, please feel free to e-mail me, at the address below.
I hope to update and add to this page often.
THE RECIPES

Ragin' Cajun Fried Chicken

1/2 cup flour
1/2 teaspoon nutmeg
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cayenne pepper
dash of salt
chicken pieces
oil for frying

DIRECTIONS

Rinse the chicken pieces and pat dry with paper towels. Fill electric skillet with about 1 1/4 cups oil. Heat to high. Put chicken pieces in a plastic bag with all the spices and flour. Shake to coat. Cut the bag open, put the chicken in the hot oil. Cover. Cook for 15 - 17 minutes. Do NOT lift the cover during that time. Turn the chicken over and repeat on the other side. Drain on paper towels.

Fried Turkey

Seasoning:

1/3 cup Tony Chachere's Creole Seasoning
1/2 cup poultry seasoning
1 Tablespoon garlic powder

DIRECTIONS

Mix together the seasonings, and rub inside and out on completely thawed turkey at least 12 hours before cooking. In a large Fish cooker, deep fry in Peanut Oil, 4 minutes per pound, once the temperature of the oil has reached 300 degrees. This makes your turkey a lot more moist than the traditional roasting.

The BEST Blueberry Muffins

4 cups all-purpose flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup butter or margarine
2 cups sugar
4 eggs
1 cup milk
2 teaspoons vanilla extract
2 cups frozen blueberries (not thawed!)

TOPPING:

2 Tablespoons sugar
1/2 teaspoon cinnamon

DIRECTIONS

In a large bowl, combine the flour, baking powder and salt.
In a mixing bowl cream the butter and sugar.
Add eggs, milk and vanilla, mix well.
Stir into the dry ingredients just until moistened. Fold in the frozen blueberries.
Fill greased or paper lined muffin cups two- thirds full.
Combine sugar and cinnamon; sprinkle over muffins.
Bake at 375 degrees for 20-25 minutes. Cool in pan for 10 minutes before removing to cool on a wire rack. Makes two dozen.
Szechwan Chicken Stir-Fry

Combine and stir well:

1 Tablespoon Soy Sauce
1 Tablespoon cornstarch
1/2 teaspoon sugar
1 clove garlic, minced
1 whole chicken breast, cut into strips
set aside

combine and set aside:
1 cup water
3 Tablespoons Soy Sauce
4 teaspoons cornstarch
1/2 teaspoon red pepper

Vegetables

1 package snow peas, with ends cut off
2 medium carrots, sliced diagonally
1 onion, diced coarsely
2 small zucchini, halfed lengthwise & cut diagonally
1/4 cup unsalted peanuts

DIRECTIONS

1. Heat 1 Tablespoon of oil in wok, Stir-fry chicken 2 mins. Remove.
2. Heat 1 Tablespoon oil . Stir-fry carrots and onions 3 mins.
3. Add zucchini, stir-fry 2 mins.
4. Return chicken to wok. Add soy sauce mixture. Cook 1-2 mins. Add peanuts.
Serve over or with hot rice.
Taco Salad

Ingredients:

(1) 15 oz can kidney or chili beans, drained and rinsed
1 lb. Hamburger, browned and drained
2 tomatoes, chopped small
1 onion, sliced thin
1-1 1/2 cups shredded cheddar cheese
bag of Doritos chips, broken into pieces
1 head of lettuce
1 small bottle Catalina style French dressing

DIRECTIONS

1. Mix lettuce, beans, meat, onion and cheese. Toss well.
2. When ready to serve, add tomatoes and chips. Toss well.
3. Immediately before serving, add dressing.
Sweet & Sour Meatballs

ingredients for meatballs:

1 lb hamburg
1/2 cup bread crumbs
1/3 cup onions
1/4 cup milk
1 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon worcestershire sauce

combine all ingredients and form approximately 50 meatballs
bake on cookie sheet in a preheated 350 degree oven for ten minutes.

sauce ingredients

1 bottle (12 oz) chili sauce
1 jar (10 oz) grape jelly

Heat jelly and chili sauce together in a saucepan, until the jelly is completely dissolved
Add the meatballs and cook for 1/2 hour
