Mexican Cornbread
  • 2 medium onions
  • 1 large bell pepper
  • 2-3 hot peppers
  • 2 eggs
  • 1 1/2 cup self-rising corn meal
  • 1 cup cheddar cheese, shredded
  • 1 can Mexican corn
  • 1/2 cup of oil
  • 1/2 cup of milk

Chop onions and peppers. Mix all ingredients together. Bake at350 degrees in a greased 13 x 9 x 2 pan.
