As I gaze at the photo of my kitchen
I think of the favorites I have used over and over!
My Broccoli casserole is a combination
of a Brocolli Caserole and a Chicken Devain,
I took both recepies and made one,


Chicken/Broccoli Casserole


1-14 oz. Pk. Broccoli Florets or Head of Fresh
Broccoli, cooked~drained & chopped
1 can cream of Mushroom Soup
1 can cream of Chicken Soup
2 Cups cooked chicken Breast, Cut fine
1 Cup Mayonnaise
1 Teaspoon Lemon Juice
½ to 1 Teaspoon Curry Powder
½ to 1 Cup Sharp Cheese, Graded
1 Medium Onion, chopped fine
Salt & Pepper

In a lightly greased Baking Dish (9 in. square or 9 X 13),
Layer the Broccoli on the bottom of the dish,
layer chicken over Broccoli
. Mix other ingredients together and pour over Broccoli and chicken.
Top with a sleeve of Ritz crackers that have been crushed and dot with butter.
Bake at 350 degrees for 30 minutes or until Bubbly.



And then there is my mothers favorite
which I take to all eating meetings
and that is Squash Caserole.


Squash Casserole

6 to 8 Squash, cooked and drained
½ Teaspoon Salt
¼ Teaspoon Black Pepper
½ stick Butter
1 chicken Bullion Cube
1 Egg
1 small Onion, chopped
3 Tablespoons Sour Cream
½ to 1 Cup Grated Cheese

Cook and drain squash, add chicken bullion cube and butter
mash with a potato masher, then add other ingredients
and pour into a baking dish.
Melt ½ stick butter and add a ½ pkg. Herb Stuffing Mix,
Mix together and sprinkle over Squash Casserole
and bake at 350 degrees for 30 Min.
If you don't have stuffing,
use crushed Ritz crackers and dot with butter.



Then every two or three days, I have a Egg Mack Grady!
A piece of hot sausage on a home made English muffin
with cheese melted on the
muffin and an egg over the sausage.
I prefer Wheat and substitute Cinnamon Raisin from time to time.


100% Whole Wheat English Muffins
Oil ¼ Cup
Sugar ¼ Cup

Salt 2 Teaspoons
Whole Wheat Flour 4 Cups
Yeast 4 Teaspoons

Roll out 1/3 to ½ inch thick on greased or sprinkled with corn meal baking sheet.
Cut into circles with 3" cutter.
Leave dough as is, cover and place in a warm draft-free location for 1 to 2 hours.
Sprinkle with more corn meal
then cook in a highly greased frying pan for 5 to 7 minutes on both sides
until both sides golden brown



Hot Pepper Jelly


½ Cup Hot Pepper ( Medium )

1 Cup Bell Pepper

1 Large Onion ( chopped )

1 ½ Cups Vinigar

6 ½ Cups Sugar

¼ Teaspoon Salt

Some use red and green peppers, both bell and hot to add color.

Put Peppers, Onions, and Vinegar into a blender.
Blend well !

Boil all together for 5 minutes,
let sit off stove and cool for 5 minuites
, then add 1 bottle Certo and pour into jars


I like to substitute and add to things that are pre packaged,
like I take a package of White Liley Muffin mix
and add chocolate chips to the batter
or add cheries or coconut,
just anything to change the flavor around.
Cooking is a love expression to me
and I have lots of love to express,
so I cook a lot !!
