Fried Green Tomatoes

3 large green tomatoes
2/3 cup all-purpose flour
1/3 cup cornmeal
1/4 tsp. salt
1/4 tsp. pepper
2 eggs, lightly beaten
Vegetable oil

Cut tomatoes into 1/4 inch slices.
Combine flour, cornmeal, salt and pepper.
Dip tomato slices in beaten eggs and dredge in flour mixture. Cook tomatoes in a single layer in 1/2 inch oil over high heat until lightly browned. Turn once. Drain on paper towel. Serves 6.

Sour Cream & Chive Mashed Potatoes

4 lb. baking potatoes, peeled and quartered
1 1/2 cups sour cream
6 Tbs. butter, cut into small pieces
1 1/2 tsp. salt
1/2 tsp. freshly ground pepper
1/2 cup snipped chives

Place the potatoes in a pot and add enough cold water to cover by 1 inch. Bring to a boil, reduce the heat, cover, and cook 15 to 20 minutes, or until tender. Reserve 1/4 cup of the cooking water.

Drain the potatoes. Return the hot potatoes to the pot and mash with a potato masher until smooth. Add the sour cream, butter, salt and pepper. Mash until fluffy, adding some of the cooking water if necessary. Stir in the chives. Serves approximately 8.

Sweet Potato Soufflé

3 cups sweet potatoes, cooked and mashed
1 cup sugar
1/2 cup milk (can or carton)
1/3 cup butter, melted
2 eggs
1 tsp. vanilla extract
Salt to taste

Combine these ingredients and pour into an 8x12 inch greased baking dish.
Mix together topping ingredients, except butter, and sprinkle over top. Then drizzle melted butter over all. Bake at 325 degrees until brown or approximately 30 minutes.

Topping:    

1 cup chopped nuts
1 cup coconut
1 cup brown sugar
1/2 cup flour
1/3 cup melted butter

Squash Dressing

2 cups cooked squash
2 cups cooked cornbread crumbled
2 eggs, slightly beaten
1 stick margarine
1 can celery soup (can use mushroom or chicken)
Salt and pepper to taste
Chopped onion to taste
Chopped celery (optional)

Combine all ingredients, mixing well.
Pour mixture into a lightly greased casserole dish.
Bake in oven at 350 degrees for 40-45 minutes.
