The Quartet of the Sea ($14) were four small white plates, fresh crab and cucumber, yellowtail tuna with Japanese lime, taxi tomatoes with ahi tuna, and my favorite, raw scallops with fresh summer truffles. On the heels of this bite of perfection came lobster with chanterelles served with a 1998 white Burgundy. My dining companion, a filmmaker, had a grilled halibut with those generously shaved white summer truffles. At about this point our conversation drifted to delicious French films like Babette's Feast and La Grande Bouffe, inspired by the on-going parade of remarkable dishes. ============================================================================================================== The standing ovation for me came with the next dish: A seared Hudson Valley foie gras that seduced me to surrender with ripe figs reclining in honey ($18). This wasn't just a dish; this was luscious, creamy duck liver, with crispy crust and ambrosia of autumn fruit. The only thing the dish needed was a golden yellow Sauterne, but before that thought had completed itself I found in my hand a glass of Chateau Coutet with a honeyed bouquet that rose this moment to a gastronomic pinnacle. ============================================================================================================== I came to my senses at the cheese course when a trolley arrived with some twenty-one different cheeses mostly from France, Italy and Spain. The waiter arranged my selection of four from mildest to strongest making a very practical procedure of tasting from left to right and he garnished the plate with various appropriate accompaniments like Champagne grapes, apricots, dates, nuts and figs. The desert of almond sorbet with fresh cherries and pistachios soothed the afterglow. But I was spent. I hadn't arrived at that moment of reckoning where over indulgence results in letting out a notch on one's belt. Rather I was satiated with satisfaction.
