QPals "Qeeper" Recipes

Quilters seem to favor recipes that are quick to put together, are tasty and easy to clean up after.
I guess it's because we want to get out of the kitchen, fast!  Gotta do some quilting!  
And if the recipes are tasty, then we don't have to hear any grumblings from the family!

The following recipes have been tested in the various kitchens of various QPals
and have been added to our personal list of "keeper recipes".
Hope that you enjoy them as we did and do.

Taco Soup

In a pot big enough to hold at least 12 cups--

Brown well and pour off grease from:

  • 1 ½ lbs. hamburger or ground chuck

Then, add, including the liquids: 

  • 1 onion, chopped
  • 1 can kidney beans
  • 1 can chili beans
  • 1 can whole kernel corn
  • 1 can Rotel tomatoes (tomatoes with green chilies and other spices)
  • Can tomatoes, 14 ½ oz., chopped
  • Can green chilies, 4 oz., chopped
  • 1 envelope Ranch Salad Dressing mix
  • 1 envelope Taco Seasoning
  • 1 ½ cups water
  • salt & pepper to taste

Bring to a boil.  Simmer for 2 hours or longer.
Makes 12 cups or 6 large servings.
Serve with shredded cheese of your choice
and/or warm tortillas and/or cornbread and/or white crackers.

Can also add to the pot:  

  • shredded, cooked pork
  • cooked noodles

Instead of Chili beans can use pinto beans.
Instead of Ranch dressing can use an envelope of Creamy Parmesan, Con Queso dip, etc.
Leave out the green chilies if you don't like it spicy.

Pumpkin Pie Cake

Mix together in a bowl:

  • 5 eggs (beaten)
  • 1 can pumpkin (regular size can, not the big one)
  • Evaporated milk, 12 oz. can
  • 1 ½ cups sugar
  • 2 teaspoons Pumpkin Pie spice

Pour into a 9 ½" x 13 ½" pan that has been sprayed with Pam or similar spray.

Sprinkle over the top of the pumpkin mixture in the pan:

  • Box of white cake mix, dry
  • 1 ½ cups of nuts (pecans or walnuts or?)
  • 1 stick (½ cup) of butter or margarine, cut into small pieces

Bake at 350 degrees 1 hour, plus 10-15 min.

Cake is done when toothpick inserted in center comes out clean.

Serve with Cool Whip or whipping cream, if desired.

Makes 12 servings (or more, if cut into smaller slices

Store leftover cake in refrigerator.

Tortellini Soup  (fast and easy, not for crock pot)

  • 1 lg can chix broth (49oz size)
  • 1 can stewed tomatoes (14 1/2oz size) with liquid (Italian flavored tomatoes)
  • 1 can dark red kidney beans (14 1/2 oz size) drained
  • 1 pkg (fresh or frozen) cheese tortellini (12-16oz)
  • 1 lid of spicy spaghetti seasoning (I use Tone's brand from Sams Club)

Bring chix broth to a boil, add rest of ingredients and simmer until tortellini is cooked---5-6 minutes.
Dish it up and sprinkle on the parmasan cheese.

Serve with garlic bread or breadsticks and tossed salad.

Can also add

  • diced, sauteed celery
  • diced, sauteed onions
  • another can (small) of chix broth if you like it more liquid
