Tam Dickson's Haggis

Traditional Recipe

• 28 lb Lamb Lungs
• 2 lb Liver
• 2 lb Mutton
• Cover with water and boil for 3 hours. Then add:
• 12 lb Oatmeal
• 1 lb Jamaica Pepper
• 12 oz Salt
• 6 oz White Pepper
• 6 lb Suet
• Mix then stuff into sheeps intestines
• Boil in a large pot until they float to the top
• These ingredients will make 40 Haggis
