Sweet Potato Pie 1 1/2 lb (700 g) sweet potatoes 1 cup (200 g) granulated sugar 12 Tbsp (180 g) unsalted butter (or use corn-oil margarine) 2 eggs 1 tsp (5 ml) vanilla 1/2 tsp (2.5 ml) nutmeg 1 pie crust, unbaked 1 Boil potatoes until tender (20-30 minutes). Drain and peel. 2 In a blender, put the potatoes, sugar and butter. Mix up a little, then add eggs, vanilla and nutmeg. 3 Blend ingredients together well, until mixture is very smooth. 4 Pour into unbaked pie shell and bake at 375F or 190C for 45-55 minutes until filling is set.
