Beer Review: Otter Creek Pale Ale


This one is advertised on the label "specially dry hopped." Dry hopping is where hops are added to the brew in the aging process, after the boil and fermentation are complete. Traditionally hops are only added during the boil--indeed boiling helps pull out the bitterness of hops. While beer must be hopped during the boil, additional dry hopping merely adds aroma to beer, not flavor--it's a practice pioneered by American micro-brewers, always ready to try something new... This beer is quite a contrast to Otter Creek's Winter's Ale, as it has real BITE. Not quite as bracing as Sierra Nevada, never-the-less, this one is not for the faint of heart--the Cascades hops really come through and this beer will really wake you up. I'd estimate the bitterness of this brew is just bit below Sierra Nevada, but more interesting, as this ale really makes you appreciate the flowery yet bitter nature of excellent hops.
