CHEERLEADER CHEESECAKE

1/2 c. butter or margarine      1/2 c. sugar
1/2 c. graham cracker crumbs    1/2 tsp. cinnamon
1. Place butter in 2 quart utility dish. Heat until melted.  Blend in crumbs,
sugar and cinnamon.
2. Press crumb mixture firmly against bottom of sides of dish. Cook in
microwave oven on full power for 1 1/2 minutes or until firm.
    3 (8 oz. each) pkg. cream cheese    1 c. sugar
    5 eggs                              1/2 tsp. vanilla
3. Beat cream cheese until smooth. Beat in eggs, one at a time. Mix in sugar
and vanilla, until smooth and creamy. Pour over crust. Cook in microwave
oven for 12 to 15 minutes, or until knife inserted near center comes out clean.*
    2 1/2 c. dairy sour cream          1 1/2 tsp. vanilla
    1/3 c. sugar
4. Combine sour cream, sugar and vanilla. Blend well. Pour mixture over
cheesecake. Cook in microwave oven on full power for 1 1/2 to 2 1/2 minutes
or until outer edge is set. Chill.
MICRO-TIPS:
*You may want to turn dish halfway through cooking time.
*Glazed fresh fruit or fruit pie fillings such as strawberry, cherry or blueberry
may be spread over top after chilled.
Yields 12 to 15 servings.
